Ingredients

  • 1/4/chopped celery
  • ½ cup sliced scallions
  • 3 tsp chopped cilantro
  • 2 tbsp prepared horseradish
  • 2 tbsp hot mustard
  • 2 tsp ketchup
  • 8 tsp cajun seasoning(store bought)
  • 3 tbsp fresh lemon juice
  • 1 tbsp dried capers
  • ½ lb shrimp
  • tsp salt
  • ½ cup plus 2 tbsp olive oil,divided
  • 2 lbs of Jumbo shrimp
  • Deveined,peeled (24 Shrimp)

Preparation

  1. To make the sauce
  2. In blender or food processor, combine first 6 ingredients, 1 tbsp lemon juice, capers, tsp Cajun Seasoning and salt.
  3. Wit machine running ,slowly drizzle in ½ cup of olive oil. Puree until smooth.Set aside
  4. In a bowl combine remaining lemon juice,capers,2 tsp 4 tsp Cajun seasoning and remaining oil, Add Shrimp, toss and coat for 30 minutes.

Ingredients (8) Cajun Seasoning

  1. 6 tablespoons paprika.
  2. 1/4 cup kosher salt.
  3. 2 tablespoons ground black pepper.
  4. 2 tablespoons ground white pepper.
  5. 2 tablespoons garlic powder.
  6. 2 tablespoons onion powder.
  7. 1 tablespoon dried thyme.
  8. 1 tablespoon cayenne.
  9. If using skewers, soak for 30 minutes in water
  10. Heat Broiler, remove shrimp from marinade, oil the broiler pan.Place shrimp on skewers in pan 5 inches from heat source for 4 to 5 minutes. Transfer to place add Sauce.

Tips

Serve sauce in small champagne glasses

Serve Shrimp with skewers on a platter on a bed of greens . Guest can help themselves.

Or place 2 shrimps inside of each glass.
