Lemon Float

Serves 4
6 lemons
1 cup of superfine sugar(erthritol, xylitol, stevia)
8 scoops of vanilla ice cream
2 bottles of club soda

1.Finely grate the lemons. Then squeeze the juice using a citrus juicer. Put the rind in a bowl with the sugar and pour over 1 pint (2/1/2 )
cups of boiling water. Stir until sugar dissolves. Let cool.
2. Stir the lemon juice into the cooled syrup. Strain the rind and chill for several hours.
3. To serve put a scoop of ice cram I a tall glass, then half fill with lemonade and plenty of lemon slices.
4. Top with soda water(club soda) and add another scoop of ice cream to each glass and serve immediately.
