Ingredients

  • 1 can of artichoke hearts,drained
  • and chopped
  • 1 large ripe tomato chopped
  • ¼ lb domestic mushrooms cleaned stemmed and chopped
  • ¼ cup scallions
  • 1 large garlic clove,minced
  • ¼ cup of lime juice
  • ¼ cup vegetable oil
  • 1 ripe avocado,peeled,pitted ,chopped
  • Salt and pepper to taste
  • 1/2/teaspoon of Old Bay Seasoning
  • Pita wedges/tortilla chips/rice Crackers
  • Lettuce cups

Preparation

  1. In a medium bowl combine the first 7 ingredients.
  2. Cover with a plastic wrap and refrigerate 30 minutes
  3. Stir in avocado, season with salt and pepper
  4. Serve with crackers or chips or lettuce cups

Tips

You can use Iceburg lettuce leaves

Wash dry and tear pieces large enough to hold ceviche.
