Ingredients
- 1 can of artichoke hearts,drained
- and chopped
- 1 large ripe tomato chopped
- ¼ lb domestic mushrooms cleaned stemmed and chopped
- ¼ cup scallions
- 1 large garlic clove,minced
- ¼ cup of lime juice
- ¼ cup vegetable oil
- 1 ripe avocado,peeled,pitted ,chopped
- Salt and pepper to taste
- 1/2/teaspoon of Old Bay Seasoning
- Pita wedges/tortilla chips/rice Crackers
- Lettuce cups
Preparation
- In a medium bowl combine the first 7 ingredients.
- Cover with a plastic wrap and refrigerate 30 minutes
- Stir in avocado, season with salt and pepper
- Serve with crackers or chips or lettuce cups
Tips
You can use Iceburg lettuce leaves
Wash dry and tear pieces large enough to hold ceviche.
